Picture speaks for itself but you too can eat something this yummy!
Cauliflower Rice – I didn’t do mine as fancy as this. I basically just did plain cauliflower “rice” steamed in some chicken broth and added some coconut oil and a bit of salt and pepper.
Salmon – fillet was cleaned and placed in tinfoil with a bit of olive oil, lemon juice and dill. We put it on the top rack of our BBQ for about 25-30 minutes.
Mango Peach Salsa
1 red tomato, 1 mango, and 2 small peaches cut into cube like pieces
1 small bunch of cilantro finely chopped
1/2 med red onion chopped
1 tbsp lemon juice
1 tbsp lime juice
salt and pepper to taste
* You will have leftovers
And voila! A very yummy dinner! 🙂
